  • Eggplant1 unit(s)
  • Oat flour1 cup
  • Grated Parmesan Cheese3 tablespoon
  • Milk1/2 cup
  • Salt to taste
  • Black pepper to taste
  1. Cut the eggplant into slices
  2. In a bowl, place the milk. And in another bowl, mix the oatmeal and the grated cheese.
  3. Dip the eggplant in the milk, and then in the flour + cheese mixture on both sides.
  4. Place on a non-stick baking sheet
  5. Bake in a preheated oven at 200°C for 20 minutes.
  6. Flip the eggplants halfway through.
