- Tomato sauce3 tablespoon
- Olive oil3 tablespoon
- Farofa: andu beans200 g
- Cassava Flour100 g
- Chopped Garlic1 tablespoon
- Chopped Onion2 tablespoon
- Chopped bell pepper1 tablespoon
- Saffron to taste
- Olive oil3 tablespoon
- Salt to taste
- Spicy paprika to taste
- I soaked the beans for 3 hours, drained the water and put it in a pressure cooker with water and a little salt, cooked for 10 minutes.
- I removed the pressure and in a skillet I sautéed the garlic in olive oil, added the peppers, onions and all the seasonings, finally I mixed the flour.
- I seasoned the clean sardines with salt, pepper and lemon, in a pressure cooker I made a layer of onion rings, tomatoes, sliced garlic, on top I arranged the whole sardines, finished with more onion and tomato rings, spread the oil and seasonings and the sauce, I closed the pan and when it got pressure I counted 15 minutes. I didn't add water, just leave it cooking on low heat so you don't run the risk of burning.
- I turned off the heat and let the pressure release completely. I served the sardines and farofa with rice and grated carrots.
