  • White rice3 cup
  • Boiling water6 cup
  • Turmeric1 teaspoon
  • Sliced Almonds50 g
  • Seedless Dates120 g
  • Butter3 tablespoon
  • Bahia orange1 unit(s)
  • Salt to taste
  1. • Boil water in a pan and add the turmeric.
  2. • Melt the butter in a medium saucepan, and add the sliced almonds. Allow to brown lightly over medium/low heat, stirring every 2 minutes. Careful, don't let it get too dark, just slightly golden. With a spoon, remove the almond and reserve in a separate bowl.
  3. • Add the rice to the butter where the almonds were browned, and sauté for 2 minutes. Add the hot water with the saffron and season with salt to taste.
  4. • Cook over medium heat for 3 minutes. Lower the heat to medium, leave the pan half-open until the water dries up (approximately 10-15 minutes). Turn off the heat and cover the pan for another 5 minutes.
  5. • Meanwhile, chop the dates and grate the orange peel.
  6. • Add the orange zest and the chopped dates to the rice and mix.
  7. • Finish the golden almonds on top just before serving. That way we make sure they get super crispy!
  8. ▪️Substitutions: 🌿 vegan: remove the butter and go with coconut oil or olive oil. If you find almond or chestnut oil, it's amazing. 🍇 Want controversy? 😆 take the date out and put the raisins in! It works with black and white. But it can be with apricots chopped into cubes too. 🌰 You can change the chestnut too. The most aromatic for this dish is actually the almond. But the others also work. Be careful when browning not butter, especially if you choose a chestnut that is already roasted.
