Rosemary to taste
Salt to taste
Black pepper to taste
Olive oil to taste
Sicilian lemon zest to taste
Onion1/2 unit(s)
Garlic Clove2 unit(s)
Peeled Tomato1 unit(s)
Honey3 tablespoon
Balsamic Vinegar1 tablespoon
Buffalo mozzarella2 unit(s)
Basil to taste

Butter to taste

Season the thigh with salt, pepper and oil. Between the skin and meat place the rosemary and lemon zest. Sear both sides in a hot skillet with oil and set aside.
In the same skillet, place the onion, garlic, tomato sauce and bring to a boil, add honey and vinegar. Turn off the heat, return the chicken to the skillet and place in the oven for 40 minutes.
Remove from the oven, add the mozzarella and return to the oven until melted.
Brown the bread with butter in the skillet. Place the chicken with a little sauce on the bread, add basil and serve.
