- Start by washing the zucchini well as we will use it with the skin. Pass the zucchini lying on the grater so that you can make long strips in full.
- In a pan or deep frying pan, sauté the onion with the oil and butter until it starts to become light, add the garlic and let it brown slightly. Lower the heat and add the tomato, season with salt and pepper and let it wilt a little, then add the zucchini, stir well, adjust the seasoning and turn off the heat. Zucchini cooks very quickly, it just needs to heat up.
- If you prefer, you can add ready-made tomato sauce, and even a basil that looks great, but I like it anyway. I added some cherry tomatoes and chives together with the zucchini.
