  • Quinoa100 g
  • bunch of parsley1 unit(s)
  • 1/2 bunch of mint1 unit(s)
  • 1/4 bunch of coriander1 unit(s)
  • Small red onion1 unit(s)
  • Ripe tomatoes4 unit(s)
  • Extra Virgin Olive Oil100 ml
  • Salt to taste
  • Black pepper to taste
  • Lemon juice25 ml
  1. Cook the quinoa in salted water until al dente. Put a pan of water to boil. Take the eye out of the tomato, being careful not to make a hole too big. Turn it upside down and make an X on the other end of the tomato. Place in boiling water and boil for 1 minute. Remove the tomato from the boiling water and place in water with plenty of ice. With the cooled tomato, remove the skins and seeds. Chop the tomato into small cubes and set aside. Separate the parsley, coriander and mint from the stalks, cut and reserve. Cut the onion into small cubes and place in ice water for 30 minutes. Reserve. Mix the cooked quinoa with the other chopped ingredients. Mix the oil and lemon juice. Season with salt and serve.
