  • Cherry tomato100 g
  • Canned corn1/2 cup
  • Buffalo mozzarella cheese100 g
  • Bread slices2 unit(s)
  • Olive oil3 tablespoon
  • Dried Oregano to taste
  • Plain yogurt1/3 cup
  • Lemon Juice1 tablespoon
  • Small garlic clove1 unit(s)
  • Salt1/2 teaspoon
  • Pepper to taste
  1. In a large bowl start tearing the leaves with your hands. Cut the onion into half moons and make very thin slices, also slice the cucumber and add the leaves, also add the tomatoes if you prefer, you can cut them in half. Add the mozzarella and corn mix it up.
  2. Cut the two slices of bread and cubes season with oregano and a spoonful of olive oil. Heat a thick skillet and place the breads to brown, stirring constantly to brown evenly. I really like to make it in the Air Fryer, it gets really crispy and it's super fast, less than 5 minutes at 180°C. Set aside on a plate to cool before adding to the salad.
  3. For the sauce, the ideal is to use a glass pot with a good seal to prepare it. Add the yogurt, remove the core of the garlic and chop it as small as possible, add it to the yogurt, also add a tablespoon of squeezed lemon, a pinch of oregano, 2 tablespoons of olive oil, pepper to taste and salt. Close the pot well and shake well until the mixture emulsifies, taste to adjust the salt if necessary. Then just pour over the salad and mix well. Don't forget to add the croutons made with the bread.
