  • Chopped Onion1/2 g
  • Tomatoes4 unit(s)
  • Olive oil1 to taste
  • Tomatoes1 cup
  • Yellow Zucchini1 unit(s)
  • Fresh thyme1 to taste
  • Salt and sugar1 to taste
  • Eggplant1 unit(s)
  • Green Italian Zucchini1 unit(s)
  1. Take the onion and garlic and brown them in a pan.
  2. Add two chopped tomatoes and let them soften.
  3. I use salt and sugar to season. Add the tomato pulp.
  4. Add a generous amount of thyme and mix, then set aside.
  5. Take the eggplant, remaining tomatoes and zucchinis and cut them into slices.
  6. Cover the bottom of a pan with 2/3 of the tomato sauce.
  7. Place the vegetables alternately as shown in the photo on a platter.
  8. Use the rest of the sauce, the pinch of salt and the thyme to season the vegetables.
  9. Cover the platter with aluminum foil and bake at 180 degrees for 30 minutes. Serve hot and enjoy!
