- Tomatoes1 cup
- Yellow Zucchini1 unit(s)
- Fresh thyme1 to taste
- Salt and sugar1 to taste
- Eggplant1 unit(s)
- Green Italian Zucchini1 unit(s)
- Take the onion and garlic and brown them in a pan.
- Add two chopped tomatoes and let them soften.
- I use salt and sugar to season. Add the tomato pulp.
- Add a generous amount of thyme and mix, then set aside.
- Take the eggplant, remaining tomatoes and zucchinis and cut them into slices.
- Cover the bottom of a pan with 2/3 of the tomato sauce.
- Place the vegetables alternately as shown in the photo on a platter.
- Use the rest of the sauce, the pinch of salt and the thyme to season the vegetables.
- Cover the platter with aluminum foil and bake at 180 degrees for 30 minutes. Serve hot and enjoy!
