- Cut the potatoes into cubes and cook until they are cooked (Prick with a fork, if it goes in easily, the potato is cooked.
- Bring the quail eggs to cook for about 15 minutes.
- Cut the tomatoes as you like.
- For the pesto, in the mixer or blender, add the sanitized coriander, the olive oil, salt and the garlic and beat very well.
- In a refractory, add the potatoes, tomatoes and put the pesto, stir well. Finally, add the quail eggs.
- Taste for salt and adjust seasonings to your liking.
