Small potatoes (or washed), 1 onion, 1 bunch of cilantro, vinegar, 1 tablespoon of salt and olive oil1/2 kg

Cook the potatoes with plenty of water, until the potatoes are covered and add a tablespoon of salt, take the pressure off and let the pressure come out completely.
Drain all the water and let the potatoes cool and set aside.
Cut the onion and cilantro, finely chopped.
In a deep dish, add the onion, cilantro, vinegar to taste and olive oil to taste (plenty).
Then put the potatoes and mix gently and leave it overnight 😉, leave it in the fridge.
Serve at room temperature or chilled. Good aperitif isn't it?!😁
