- Moroccan Couscous1 cup
- Dark raisin100 g
- Apricot100 g
- Brazil Nuts100 g
- Olive oil1 tablespoon
- Salt and pepper to taste
- Soak the raisins to hydrate and swell. Reserve.
- Cover the couscous with 2 cups of hot water and leave for 10 minutes to hydrate. Reserve.
- Cut the apricot into small pieces and crush the Brazil nut.
- Add the couscous and the olive oil, mix to leave it very loose and let it cool.
- Add the other ingredients and place in the fridge. Preferably consume chilled.
