Bata ligeiramente os ovos;
Adicione o requeijão, o sal, temperos e bata novamente;
Lave as folhas de espinafre e pique bem picadinho;
Unte uma frigideira (usei manteiga), coloque o espinafre, leve ao fogo e refogue até murchar;
Junte as folhas refogadas ao omelete e misture;
Unte uma frigideira, despeje o omelete e leve ao fogo baixo;
Deixe dourar dos dois lados e sirva!
