  • Large eggplant cut into medium cubes1 unit(s)
  • Large zucchini cut into medium cubes1 unit(s)
  • Chopped Cauliflower2 cup
  • Chopped green beans1 cup
  • Chopped red and yellow bell pepper1/2 cup
  • Chopped Onion1/2 cup
  • Chopped fresh rosemary to taste
  • Sea Salt to taste
  • Olive oil1/4 cup
  • Coarsely chopped walnuts to taste
  1. Place all ingredients in a baking dish and mix well.
  2. Place in a preheated oven at 220ºC to bake for about 25 minutes, stirring a few times to avoid burning.
  3. After cooling, transfer to a container with a lid, drizzle with olive oil and refrigerate for at least 2 hours before serving.
  4. Serve with toast and bread.
