Moroccan Couscous1/2 cup
grated carrot1 unit(s)
Diced Zucchini1 unit(s)
Chopped Onion1/2 unit(s)
Minced Garlic Cloves2 unit(s)
Bay leaf1 unit(s)
Olive oil2 tablespoon
Salt to taste
Pepper to taste
Cinnamon to taste
Sweet paprika to taste
Nuts of your choice1 tablespoon
Boiling water1 cup

In a pan, heat 1 tablespoon of oil and sauté the onion and garlic until lightly browned. Add the bay leaf.
Add the carrots and season with salt, pepper, paprika and cinnamon (gives an amazing taste). Let it cool for about 3 minutes.
Add the zucchini and sauté another 3 minutes.
Turn off the fire. Add the couscous and adjust the salt. Add 1 tablespoon of oil and the boiling water. Mix well and cover the pan for 5 minutes.
