- Diced Melon1 unit(s)
- Fresh Basil Leaves1/2 cup
- Olive oil, salt and freshly ground black pepper to taste
- Arugula2 cup
- Lemon1 unit(s)
- Freshly grated nutmeg1 coffee spoon
- Thinly sliced red onion, marinated in salt and lemon for 10 minutes1/2 unit(s)
- Discard the water from the hydration of the chestnuts and hit the blender with twice the volume of water until you get a smooth sauce. Season with nutmeg, 1/2 lemon and salt
- Gently mix all the ingredients, except the chestnut sauce. Season with salt and pepper. Drizzle with olive oil. Spread the chestnut cream. Serve next.
