  • Potato500 g
  • Carrot2 unit(s)
  • Eggs3 unit(s)
  • Corn1 can(s)
  • Mayonnaise4 tablespoon
  • Lemon1/2 unit(s)
  • Green Olives to taste
  • Parsley to taste
  1. Chop the potatoes and carrots. Place in a pan and bring to a boil in water along with the eggs.
  2. Once cooked, drain and reserve.
  3. Peel the eggs, separate the yolks and chop the whites, set aside
  4. In a refractory place the boiled yolks and a little of the boiled potatoes. Knead well and add the mayonnaise. Mix and add the lemon juice, parsley and corn. Shake well
  5. Add the egg whites, olives, carrots and the rest of the cooked potatoes, mix well and refrigerate until serving.
