  • Olive oil, salt and smoked paprika to taste
  1. Wash, sanitize and cut the eggplants into cubes.
  2. Soak in water and salt for 20 minutes.
  3. Place the eggplant cubes in a sieve. Rinse under running water and let the excess drain.
  4. Season the cubes with the oil, salt and paprika.
  5. Heat the Airfryer 180° for 5 minutes. Place the seasoned cubes and adjust the time to 20 minutes.
  6. Mix in half the time.
  7. Transfer to a bowl, sprinkle with chopped green onions and serve!
