Yellow pepper02 unit(s)
Salt00 to taste
Black pepper00 to taste
Small onion01 unit(s)
Garlic03 unit(s)
Olive oil1/2 cup
Vinegar00 to taste
Tomato01 unit(s)
Olive1/2 cup

Cut the eggplant into cubes, and put it in water with vinegar so it doesn't darken.
Drain this water, and put it to a quick boil in salted water.
Drain again and set aside.
Add the oil, garlic, onion, tomato and olives. Saute everything.
Cut the peppers into strips and sauté together just to wilt.
Combine the sautéed with the eggplants
Finish with vinegar and black pepper. If you prefer, add cilantro.
