- Parmesan cheese to taste
- Peel the eggplants, cut them into slices and leave to soak in salted water for 10 to 15 minutes.
- Dry them on a cloth and fry them in hot oil.
- Make a separate tomato sauce, arrange in a refractory dish greased with butter, the eggplant slices and the tomato sauce, in layers, until the ingredients are used up. Finally the tomato sauce.
