  • Parmesan cheese to taste
  1. Peel the eggplants, cut them into slices and leave to soak in salted water for 10 to 15 minutes.
  2. Dry them on a cloth and fry them in hot oil.
  3. Make a separate tomato sauce, arrange in a refractory dish greased with butter, the eggplant slices and the tomato sauce, in layers, until the ingredients are used up. Finally the tomato sauce.
  4. Sprinkle with plenty of grated Parmesan cheese and bake in the oven until golden.
  5. Serve it hot.
