- Seasonings to taste
- Olive to taste
- Olive oil to taste
- Garlic to taste
- Onion to taste
- Cut the eggplants into cubes and set aside.
- Cut the peppers into small pieces along with the other seasonings (garlic and onion) and set aside.
- In a pan, sauté the seasonings and add the sliced eggplants.
- After everything is sautéed, put it on a baking sheet, adding the olives and oil, mix everything and spread it out in the pan, cover with aluminum foil, take it to the oven for about 40 minutes.
