Dogfish fillet in passion fruit sauce

    2. Pass 3 passion fruits through a sieve to separate the juice from the seeds, reserve the other
    3. Over low heat, melt the butter in a small pan. When it melts, add the sugar and cook until it turns into syrup.
    4. Add the wine and passion fruit juice, let it boil for about 1 to 2 minutes, add the reserved passion fruit pulp with the seeds.
    5. Adjust the acidity of the sauce by gradually adding the sugar until it is to your liking.
