- Dry white wine1 cup
- Sugar3 tablespoon
- Butter3 tablespoon
- Game fillet6 unit(s)

- Sauce
- Pass 3 passion fruits through a sieve to separate the juice from the seeds, reserve the other
- Over low heat, melt the butter in a small pan. When it melts, add the sugar and cook until it turns into syrup.
- Add the wine and passion fruit juice, let it boil for about 1 to 2 minutes, add the reserved passion fruit pulp with the seeds.
- Adjust the acidity of the sauce by gradually adding the sugar until it is to your liking.
- Dogfish fillet
- Season the fillets with salt and pepper to taste
- In a non-stick frying pan, add a drizzle of olive oil and let it heat up well. When it is hot, add the fillets.
