- Butter beans250 g
- Romaine Lettuce (soak)1/2 unit(s)
- Mustard leaf (soak)1/2 unit(s)
- Figs2 unit(s)
- Beet mini2 unit(s)
- Red Onion1 unit(s)
- Olive oil50 ml
- Black pepper to taste
- Salt to taste
- Lime1 unit(s)
- Soak the beans for at least 6 hours
- Sanitize all supplies
- Drain the water from the beans and cook it in a pressure cooker, leave it for 8 minutes after the pressure starts
- Peel and slice the beetroot and red onion
- Select the leaves for the salad and cut the lettuce roughly
- After cooking the beans, drain and wash under running water so as not to mix the beans with the hot salad.
- Add the beans to the lettuce, mustard and onion
- Drizzle with olive oil, season with salt, lemon and pepper to taste
- Cut the figs into quarters each
- Assemble the salad with the mix of greens, beans and red onion
- Finish with the beetroot and two figs per serving.
- Throw a thread of olive oil per plate and serve!
