- Chickpeas300 g
- Carrot1 unit(s)
- Onion1 unit(s)
- Tomato3 unit(s)
- Canned corn1 can(s)
- Salt and pepper to taste
- Coriander and chives to taste
- Olive oil3 tablespoon
- Lemon1/2 unit(s)
- In a bowl, cover the chickpeas with water and soak for at least 6 hours. After that, discard the water and take the chickpeas to cook in the pressure cooker until it's really soft (here at home, it lasts about 40 minutes).
- Remove the chickpeas from the pressure and let it cool.
- Meanwhile, cut the onion and tomato into small cubes and grate the carrot.
- In a bowl, add all the ingredients together (chickpeas, onions, tomatoes, carrots, corn, cilantro and chives). You can add olives if you like. Season with salt, pepper, juice of half a lemon and olive oil (you can add more if you want). Enjoy!
