Black-eyed Bean Salad with Beef

  • Salt to taste
  • Olive oil to taste
  • Dry meat500 g
  • Pepperoni sausage1/2 unit(s)
  • Bacon300 g
  • Green Smell to taste
  1. Let the black-eyed peas soak for at least 8 hours, changing the water during the process, if possible. After the soaking time, cook the black-eyed peas for 5 to 10 minutes in the pressure cooker, remove and reserve in a colander.
  2. While the black-eyed peas are cooling, it's time to desalt the jerky. Cut into small pieces, and boil, changing the water at least twice, or as many times as necessary. Once ready, book.
  3. Now it's time to cut the parsley, sausage, and bacon. After cutting the green smell, reserve it in a pot. And after cutting the sausages and bacon, take it to medium heat to brown a little, be careful in this step so you don't end up frying too much.
  4. Take the beans that we reserved earlier and pour into a large refractory. Then add the oil, salt to taste. Soon after, also mix with the beans the green smell already cut previously.
  5. Now it's time to mix the bacon and sausage previously browned, and also mix with the beans in the refractory. A tip: the oil released from Bacon and pepperoni gives our black-eyed bean salad a delicious taste, but you can't overdo it, huh? 🥰
  6. Finally, mix in the dried meat as well. And it's ready to serve.
