- Start by cutting all the vegetables and the onion into cubes.
- Combine all the chopped ingredients in a bowl and add the oil, salt and pepper.
- Bake in a roasting pan covered with aluminum foil at medium temperature for 1h (if you left your ingredients in larger pieces, leave it for another 20 min.).
- Then remove the foil, give the vegetables a stir and see if it is too dry, if so, add a little more oil, adjust the salt.
- Leave another 20 to 30 minutes without the paper until the vegetables are golden brown.
