- Wheat flour175 g
- Alkaline cocoa powder, no added sugar30 g
- Baking powder2 tablespoon
- Salt1 teaspoon
- Cinnamon powder1 teaspoon
- Xylitol Sweetener200 g
- Whole Grain Yogurt180 g
- Vegetable oil1/2 cup
- Eggs2 unit(s)
- Vanilla Extract1 teaspoon
- Preheat the oven to 180° and lightly brush a loaf pan with oil, line it with parchment paper leaving leftovers on the two longer sides, forming “handles” and brush the paper with oil as well.
- In a medium bowl, sift the flour, cocoa, baking powder, salt and cinnamon and set aside.
- In a large bowl, combine the xylitol, yogurt, oil, eggs and vanilla. Mix using a whisk until smooth.
- With a silicone spatula, incorporate the dry ingredients - if the dough is too lumpy, mix lightly with the wire whisk, but don't beat too much so as not to develop the gluten in the flour
- Pour the dough into the prepared form and smooth the dough, place the form in the oven
- Bake for 50-55 minutes or until the cake rises and is golden.
- Allow to cool in the pan on a wire rack for 15 minutes, then carefully remove from the pan, using the paper as a guide.
- Transfer to wire rack and let cool completely.
