- Black pepper to taste
- Garlic to taste
- Salt to taste
- Baking powder1 coffee spoon
- Oregano to taste
- Parsley to taste
- Chives to taste
- Eggplant flour2 tablespoon
- In a pan, cook the chayote
- Once cooked, mash the chayotes, add 2 tablespoons of eggplant flour and the two egg yolks. Season to taste.
- Add the pinch of baking powder and stir gently and set aside.
- In a separate bowl, beat the two whites with an egg beater or an electric mixer until stiff peaks form.
- Add the egg whites to the dough mixture. Stir gently and bake in the oven for about 30 minutes.
- serve while still hot
- If you want more flavor, add cheese to the dough!
