- Wheat flour2 cup

- In a bowl, sift the flour, a pinch of salt and 2 tablespoons of sugar.
- Add 1 tablespoon of butter and mix with your fingertips.
- Add the cream little by little, until it becomes a smooth dough that does not stick to your hands. Wrap in plastic and leave in the fridge for 30 minutes.
- Meanwhile, prepare the filling. Peel the apples and cut into slices.
- In a pan put 1 cup of sugar. When it starts to caramelize, add the butter, apples, and cinnamon.
- Add the water and let it boil until the sugar clumps dissolve. The apples should be soft but not too mushy. If you want you can add 5 tablespoons of cognac in place of the water.
- Place the apples in a pie tin, pour all the syrup over the apples.
- Roll out the dough with a rolling pin and cover the apples.
- Bake in a preheated oven at 180° for about 35 minutes. The edges of the pie are lightly browned.
- Unmold while still hot so the caramel doesn't stick.
- Tip: serve with a scoop of ice cream!
