Sweet Potatoes with Ginger

  • Large pink sweet potato1 unit(s)
  • Light cream3 tablespoon
  • Cooked and shredded chicken breast250 g
  • Light cottage cheese2 tablespoon
  • Mozzarella30 g
  • Butter1/4 tablespoon
  • Salt to taste
  • grated ginger to taste
  1. Wash, peel and cut the potato. Place in a pan and cover with water. Let it boil until the pieces are soft.
  2. Drain the water and mash the potatoes while still hot. Season with salt and freshly grated ginger. Add the cream and mix well. Reserve.
  3. Season the shredded chicken to taste. I like to use salt, oregano and sweet paprika. Mix the curd to form a paste, you can use 2 more tablespoons of cream to make it more creamy.
  4. Line the bottom of a refractory with half of the puree, put the stuffing and cover with the other half of the puree.
  5. Cover with the mozzarella and take it to the preheated oven until golden.
