  • Water100 ml
  • Olive oil13 tablespoon
  • Salt1 to taste
  • Spinach3 unit(s)
  • Onion1 unit(s)
  • Eggs2 unit(s)
  • Grated Parmesan4 tablespoon
  • Nutmeg1 to taste
  1. Put flour, salt and oil in a bowl and add the water little by little.
  2. Knead well with your hands, for 5-10 minutes, until obtaining a homogeneous and elastic dough.
  3. Cook the spinach, squeeze to remove the water and roughly chop.
  4. Slice the onion and sauté in a little oil, without coloring. Mix spinach, sautéed onion, eggs, nutmeg, salt and grated Parmesan.
  5. In a pyrex (24 cm diameter) place 6 large spoons of oil. Divide the dough into 4 pieces (2 larger Pyrex ones to line the bottom and 2 Pyrex-sized pieces to cover the pie).
  6. On the table sprinkled with flour, open each piece with the rolling pin, forming 4 very thin discs.
  7. Place the two large disks on the pyrex, place the filling and cover with the two smaller disks. Close the pie by folding the excess dough towards the center.
  8. Drizzle with 6 more tablespoons of oil and spread well over the entire surface, pierce the surface of the pie with a fork 7-8 times.
  9. Place the pie in a 200⁰C oven for 30 minutes (properly preheated) or until the pastry is golden and crispy and the oil is completely absorbed.
