- Pickled frozen vegetables300 g
- Wheat flour1 tablespoon
- Butter1 tablespoon
- Skimmed milk500 ml
- Salt to taste
- Pepper to taste
- Nutmeg to taste
- Chopped Mozzarella1 cup
- Grated Parmesan to taste
- In a pan, melt the butter and add the wheat flour, stirring immediately with fouet until lightly golden.
- Add the milk and stir well.
- Add the yolks and continue to stir until cooked through (about 10 minutes.
- Season with salt, pepper and nutmeg! Reserve.
- Whip the egg whites. Reserve.
- Mix the vegetables (already thawed and without excess water) with the white sauce, add the cheese and gradually incorporating the snow whites.
- Place in a refractory or ramekin, sprinkle with grated Parmesan cheese and bake in the oven for about 30 minutes, or until golden.
