  • Large eggplants3 unit(s)
  • Can of tomato sauce1 unit(s)
  • Coriander bunch cut into small pieces1 unit(s)
  • Sliced Pitted Olives1 unit(s)
  • Sliced Mozzarella Cheese300 g
  • Sliced ham300 g
  • Spoons of olive oil2 tablespoon
  1. Cut the eggplant into slices.
  2. In a refractory rectangular roast, place the two tablespoons of olive oil and a little tomato sauce on the bottom.
  3. Then place a layer of eggplant.
  4. Cover with tomato sauce, sprinkle with olives and cilantro.
  5. Then place a layer of ham.
  6. Add a layer of eggplant, cover with tomato sauce and top with a layer of mozzarella cheese.
  7. Repeat steps 3, 4 and 5 to form two more layers.
  8. Place catupiry cheese on top, to taste, and cover the roast with aluminum foil.
  9. Place in the oven for about 30 minutes to cook.
  10. After that, remove the foil and leave for another 5 to 10 minutes to brown.
  11. Serve it hot.
