- Salt to taste
- Spinach1/4 cup
- Mozzarella cheese30 g
- Olive oil to taste
- Pass the spinach leaves in the skillet with a thread of olive oil and salt, just to wither the leaves.
- Peel and grate the potato. Squeeze well with a dish towel to remove excess liquid. Season with salt.
- Heat a frying pan with olive oil and place half of the grated potato.
- Place the spinach in the center and the cheese on top. Cover with the rest of the potato.
- As soon as the underside is browned, turn it over. You may need to transfer to a plate and back to the skillet to switch sides.
- Once golden, it will be ready!!!
