  • Coconut Flour or Almond Flour2 cup
  • Coconut Sugar or Xylitol or Demerara Sugar8 tablespoon
  • Chemical Baking Powder2 tablespoon
  • Bananas cut into slices8 unit(s)
  • Cinnamon powder to taste
  1. In a bowl, beat the eggs until foamy. Add the flour and sugar or xylitol. Mix initially with a spoon and then knead with your hands. Finally, add the yeast. In a greased shape with coconut oil (I used a removable background shape), mold the dough on the bottom and sides of the shape. Stuff with sliced bananas sprinkled with ground cinnamon and more sugar, if desired.
  2. With the rest of the dough, make rolls and distribute over the bananas, forming a square.
  3. Bake in a preheated oven at 200 degrees for approximately 15 minutes.
  4. Note: My pan is large, so I made “one and a half recipe.
