  • Boiled Cassava500 g
  • Hot milk1/4 cup
  • Butter2 tablespoon
  • Desalted and shredded beef jerky250 g
  • Coriander to taste
  • Onion1/2 unit(s)
  • Tomato1/2 unit(s)
  • Black Pepper to taste
  • Charque cooking water1/4 cup
  • Curd cheese or mozzarella1/2 cup
  • Olive oil1 dessert spoon
  1. Mash the cassava with the aid of a fork, add the milk and butter, taking it to low heat for 3 minutes, set aside.
  2. Place a thread of olive oil in a pan over low heat, add the onion, tomato and cilantro, after sautéed add the charque with the black pepper, also add 1/4 cup of the charque cooking water so the stuffing doesn't stay dried up.
  3. Assembly: Put a layer of puree, then the stuffing, cover with another layer and sprinkle the cheese.
  4. Place in a preheated oven at 200°C to brown the cheese.
