  2. red fruit syrup In a pan over low heat, add the frozen fruits, sugar and lemon and let it cook until the liquid that the fruits have released is reduced.
  3. Filling In the blender add the ricotta, condensed milk, eggs and cornstarch, orange or lemon zest if desired. Whisk everything together until smooth.
  4. Open the pie base On a firm surface, place a plastic film or parchment paper and with the help of a rolling pin roll over the dough until it is larger than the size of your chosen shape. After this process and just transfer the dough into the mold, don't worry if the dough cracks because it's just a matter of patching where you tore it and then squeezing it with your fingertips until the dough is evenly distributed throughout the shape after that and just do it. holes with the fork. I recommend a shape of approximately 25 cm wide and with a removable bottom to facilitate the removal of the pie after it is ready.
  5. So just turn off the oven and leave it there to cool when it is already at room temperature, you can unmold it and transfer it to a nice cake plate you have and place the red fruit jelly on top of the filling and, if you wish, add the fresh fruit. , and your Cheesecake is ready if you prefer you can leave it in the fridge for a while but I doubt you want to wait any longer.
