  • Maizena Biscuit150 g
  • Cream cheese300 g
  • Fresh cream250 ml
  • Sugar85 g
  • Milk90 ml
  • Colorless unflavored gelatin15 g
  • Water75 ml
  • Gem2 unit(s)
  • Lemon juice1 unit(s)
  • Strawberry300 g
  • Sugar150 g
  1. For mass: Break up the cookies, with your hands or with the help of a food processor, until you get a fine flour. Toss with the butter and a pinch of salt. Arrange on the bottom of a shape. Bake in a preheated oven for 15 minutes at 170°. Reserve.
  2. For the filling: Mix the cream cheese with the lemon juice and set aside. Whip the cream to whipped cream and set aside. Dilute gelatin in water and set aside. In a bain-marie, add the yolks, milk and sugar until there are no more palpable grains of sugar. Heat the gelatin a few seconds in the microwave and add to the cooking. Remove from heat and mix with creamcheese until cool. Carefully fold in the whipped cream until homogenized. Pour the filling over the baked dough and rest in the fridge for at least 3 hours.
  3. To the roof: Cut the strawberries into small pieces, and cook with the sugar and a little water. Cook over low heat until the water evaporates and starts to form a jelly-like consistency. Use creativity and vary the flavors of your topping!!!
  4. After the cheesecake rests, remove from the mold and pour the cooled topping on top. Serve.
