  • Yam300 g
  • Water or milk300 ml
  • Wheat flour200 g
  • Grated Parmesan or Provolone Cheese30 g
  • Butter18 g
  1. Peel the yams, steam them. Then knead and bring to the fire in a large pan with the other ingredients, except the wheat flour. When it comes to a boil, add the wheat all at once, stirring constantly over low heat, until the pasta cooks and releases from the bottom of the pan.
  2. Place this hot dough on a bench, wait for it to cool. Shape into small pieces. Reserve a bowl with a generous drizzle of olive oil and add the gnocchi.
  3. Now just add your favorite sauce. A little grated cheese and serve.
