- Carioca bean puree50 g
- Rice flour65 g
- Potato Starch15 g
- Xanthan Gum5 g
- Powdered demerara sugar1 coffee spoon
- Salt1 coffee spoon
- Olive oil1 coffee spoon
- Filtered warm water40 ml
- Organic Dry Yeast1 dessert spoon
- Start by sifting the beans and set aside;
- Mix warm water with salt, sugar and dry yeast and let it rest for 10 minutes;
- Mix with the flours and set aside;
- After 10 minutes, add the oil and mashed beans to the mixture;
- When everything is very homogeneous, put the mix with the flour until it doesn't stick to your hands anymore - you may use all the flour or not;
- Let it rest for another 15 minutes - or until about the size;
- Put some flour on the table and knead for 2 minutes;
- Open with the help of a roll and fill with your preference;
- Bake at 180° for about 20 minutes or until golden.
