  • Carioca bean puree50 g
  • Rice flour65 g
  • Potato Starch15 g
  • Xanthan Gum5 g
  • Powdered demerara sugar1 coffee spoon
  • Salt1 coffee spoon
  • Olive oil1 coffee spoon
  • Filtered warm water40 ml
  • Organic Dry Yeast1 dessert spoon
  1. Start by sifting the beans and set aside;
  2. Mix warm water with salt, sugar and dry yeast and let it rest for 10 minutes;
  3. Mix with the flours and set aside;
  4. After 10 minutes, add the oil and mashed beans to the mixture;
  5. When everything is very homogeneous, put the mix with the flour until it doesn't stick to your hands anymore - you may use all the flour or not;
  6. Let it rest for another 15 minutes - or until about the size;
  7. Put some flour on the table and knead for 2 minutes;
  8. Open with the help of a roll and fill with your preference;
  9. Bake at 180° for about 20 minutes or until golden.
