  • Sake1/2 cup
  1. broth: In a pressure cooker, add pork cinnamon (stinco) and a drizzle of olive oil, sealing on all sides. Then add the onion and carrot, in coarse cuts. When everything is golden, add sake with the pan very hot, let the alcohol evaporate, add water up to 1/3 of the pan. Cover the pressure cooker. After 35 minutes with the pan sizzling, the broth will be ready.
  2. With the broth ready, it is necessary to add soy sauce, ginger and hondashi until the flavors are balanced.
  3. Cook the eggs for 5 minutes so that the yolk is soft.
  4. Sear the pork belly and cut the chives. With the cooked pasta, add it to the broth and place the pre-prepared ingredients.
  5. Serve in a typical oriental deep dish! 💥 Good appetite 🥢
