- Cold butter2 tablespoon
- Salt to taste1 to taste
- Wash, dry and peel the sweet potatoes. Cut into thick half moons and transfer to a medium saucepan. Cover with water and season with ½ teaspoon of salt. Take to the high fire and, as soon as it boils, let it cook for about 20 minutes, or until they are soft - to check, stick with a fork. Turn off the heat and reserve 1 cup (tea) of the cooking water. Drain the potatoes through a sieve. Return the potatoes, still hot, to the same pan and beat with a hand mixer until smooth. Add, little by little, the cooking water to give the point. If you prefer a more rustic puree, pass the potatoes through a juicer.
- Add the butter and stir well with a spatula until it melts and the puree is creamy. Taste and, if necessary, season with more salt. Serve next.
