Sweet potato gnocchi with sauce

- Sweet Potato1 kg
- Wheat flour1 cup
- Butter1 tablespoon
- Tomato Extract3 tablespoon
- Onion to taste
- Garlic to taste
- Salt to taste
- Pepper to taste
- Basil to taste
- Ground beef200 g
- Butter to taste
- Colorau1 coffee spoon
- Parsley to taste
- Cook the sweet potatoes in their skins under pressure for 40 minutes.
- Once cooked, peel them while still hot and mash them well.
- Add the butter and wheat flour and knead until smooth.
- Place in the fridge for 20 minutes.
- Meanwhile, in a pan, sauté the ground beef with all the spices in the description and whatever else you prefer.
- After the meat is braised and fried, add the tomato paste and 2 cups of water. If you wish, you can add more extract. Let this sauce boil for 15 minutes or until it thickens.
- While the sauce is boiling, remove the gnoc from the fridge and on a countertop, take a part of the gnoc dough and roll it into thin rolls, then cut into slices.
- Boil approximately 2 liters of water in a very large pot.
- With the water still boiling (fire always on) gradually add the gnoc. Add an amount and wait. When they float, it means they are cooked, remove them from the water with a slotted spoon and add them directly to the sauce. Repeat this procedure until all the gnocchi are cooked.
- Add more butter to the sauce and gnocchi, mix and serve with your favorite grated cheese and fresh basil.
