- Divide the potato in half (after cooked), then leave a cavity in each one and leave them separate.
- In a bowl, mix the potato masses with salt, pepper, egg, mozzarella cheese, fried bacon and sour cream, mix well
- On a platter, place the two potatoes and distributing in each cavity a little cheese, the mixture of the potato masses, fried bacon, plus a little mozzarella cheese on top, bacon and finish with chopped chives.
- Bake at 230°C for about 20 minutes
