  • Spaghetti grano duro100 g
  • Bacon50 g
  • Egg2 unit(s)
  • Black pepper to taste
  • Salt to taste
  • Parmesan or pecorino70 g
  1. Put 2 liters of water to boil. As soon as it boils, add a handful of salt and the grano duro pasta.
  2. While the water is boiling, cut the bacon into very small pieces and fry over low heat in a skillet (preferably aluminum). Aluminum skillets maintain the correct temperature for this preparation.
  3. Separate the yolks of the 2 eggs in a bowl (or bowl) and place the pecorino (or grated parmesan) with ground black pepper to taste. Mix it all up. It needs to be a paste. If there is liquid, add more Parmesan.
  4. Remove the dough a little before the point and put it in the skillet that has the bacon. Add a little of the cooking water and let it reach the correct point. (Al dente).
  5. Turn off the heat, stir the dough while waiting for about 30 seconds. (To lose some of the heat). Now just put the egg mass + Parmesan and mix very fast to incorporate and get creamy. If you need, you can add a little, but very little, of the cooking broth to give it creaminess.
  6. Check the salt and adjust if necessary. Serve right away. Enjoy your food.
