Spaghetti Alla Carbonara

Coloque a água do cozimento para ferver.

Corte o bacon em cubos, rale o parmesão na parte mais fina do ralador e reserve.

Cut the bacon into cubes, grate the Parmesan on the thinnest part of the grater and set aside.

Assim que a água levantar fervura, coloque o sal e em seguida coloque o macarrão para cozinhar. 

Obs: Não coloque óleo na água do macarrão.

As soon as the water comes to a boil, add the salt and then put the pasta to cook.

Note: Do not put oil in the pasta water.

Enquanto o macarrão cozinha, frite o bacon em fogo médio/alto até que dourem completamente (É mais ou menos o tempo que o macarrão leva pra cozinhar).

While the noodles are cooking, fry the bacon over medium/high heat until golden brown (this is about the time the noodles take to cook).

Em um recipiente misture as gemas, o parmesão e a pimenta até que se incorporem. Coloque 4 colheres da água do cozimento do macarrão nessa mistura e mexe bem (cuidado para não cozinhar os ovos nessa etapa).

In a bowl, mix the egg yolks, parmesan and pepper until incorporated. Add 4 tablespoons of the pasta cooking water to this mixture and mix well (be careful not to cook the eggs at this stage).

Retire a massa da água do cozimento com um pegador e coloque na frigideira junto com o bacon. Adicione um pouco da água do cozimento e mexa a frigideira para que os sabores se incorporem.

Remove the pasta from the cooking water with tongs and place in the skillet along with the bacon. Add some of the cooking water and stir the skillet so that the flavors come together.

Apague o fogo, adicione a mistura dos ovos com parmesão ao macarrão e mexa rapidamente. Vá adicionando a água do cozimento aos poucos, pois é nesse momento que você vai decidir se quer um molho mais líquido ou mais espesso. Sirva rapidamente.

Turn off the heat, add the Parmesan-egg mixture to the pasta and stir quickly. Add the cooking water little by little, as it is at this point that you will decide whether you want a more liquid or thicker sauce. Serve quickly.
