- Bring the cooking water to a boil.
- Cut the bacon into cubes, grate the Parmesan on the thinnest part of the grater and set aside.
- As soon as the water comes to a boil, add the salt and then put the pasta to cook. Note: Do not put oil in the pasta water.
- While the noodles are cooking, fry the bacon over medium/high heat until golden brown (this is about the time the noodles take to cook).
- In a bowl, mix the egg yolks, parmesan and pepper until incorporated. Add 4 tablespoons of the pasta cooking water to this mixture and mix well (be careful not to cook the eggs at this stage).
- Remove the pasta from the cooking water with tongs and place in the skillet along with the bacon. Add some of the cooking water and stir the skillet so that the flavors come together.
- Turn off the heat, add the Parmesan-egg mixture to the pasta and stir quickly. Add the cooking water little by little, as it is at this point that you will decide whether you want a more liquid or thicker sauce. Serve quickly.
