  • Ripe tomatoes3 kg
  • Onion2 unit(s)
  • Coarsely chopped garlic cloves4 unit(s)
  • Basil sprigs5 unit(s)
  • Olive oil5 tablespoon
  • Salt and pepper to taste
  1. Cut the tomatoes in half, removing the stem.
  2. Distribute them in a form lined with aluminum foil.
  3. Distribute the onions, garlic cloves and sprigs over the tomatoes.
  4. Drizzle with olive oil and take it to the medium oven (180oC) without covering.
  5. When they are soft, discard the basil sprigs and remove the skins from the tomatoes.
  6. It takes a lot of work to remove the skins, if you want to keep it, you can too.
  7. Put everything in a blender, including the roasted onions and garlic.
  8. Whisk well until completely smooth. Place the blended liquid in a pan to reduce a little.
  9. Portion in small amounts and place in the freezer. To defrost, heat in a pan with a little water.
