Risotto from Minas Gerais

Colocar água em uma panela grande e adicionar cebola, batata, cenoura e alho poró para ferver e preparar o caldo que será usado na preparação. Deixar ferver e guardar.

Put water in a large pot and add onion, potato, carrot and leek to boil and prepare the broth that will be used in the preparation. Let it boil and store.

Fritar as linguiças em uma frigideira com um pouco de azeite e alho picado, cortá-las em rodelas e guardar.

Colocar o azeite e um pouco da manteiga para dorar a cebola. Quando estiver transparente, jogar o arroz para dar uma refogada rápida. Logo depois, colocar o vinho e deixar secar. Conforme for secando, ir regando com o caldo de legumes até ficar no ponto do arroz. Não parar de mexer. Geralmente o risoto se come mais Al Dente. Acrescentar o açafrão, a linguiça e o queijo ralado. Desligar o forno e acrescentar a manteiga. Verificar o sal e pimenta e servir.
