  • Unsalted butter200 g
  • Onion1/2 unit(s)
  • White wine1/2 cup
  • Vegetable broth2 l
  • Arborio rice3 cup
  • Leek cut into strips1 unit(s)
  • Parsley to taste
  • Grated Parmesan1 cup
  • Rosemary to taste
  • Salt to taste
  • Black pepper to taste
  1. In a wide-bottomed pan, heat a spoonful of butter and sauté the onion and leek until the onion is almost invisible.
  2. Add the rice and toast until the grains are well coated in butter, then add the white wine and let it dry completely.
  3. Add the vegetable broth one ladle at a time, stirring constantly. Do this process successively until the rice is al dente. Hit the salt and pepper and add the green seasonings.
  4. Remove the pan from the heat and finish with the remaining butter and parmesan, stirring until incorporated.
  5. Serve immediately.
